Cheesy Hash Brown Egg Casserole

1/2 pound bacon

1/2 cup chopped onion

1/2 cup chopped green pepper

12 eggs

1 cup milk

Salt and pepper

16 oz. shredded hash brown potatoes

2 cups shredded cheddar cheese

Cook bacon until crisp. Sauté onion and green pepper in the bacon drippings until tender. In a large bowl, whisk eggs, milk, and seasonings. Stir in the hash browns, cheese, onion mixture, and bacon. Bake in a 9”x13” baking dish uncovered at 350° for 35-45 minutes.
